I read the reviews carefully before selecting this machine. My machine arrived in perfect condition and sooner than expected. I cleaned the drum and put it in the freezer 24 hours. It was frozen solid when I used it and my ice cream came out perfect. My husband couldn't quit raving about it and how much better it tasted than store bought!

It was rated highly but there were some one star ratings that said it wasn't powerful enough to thicken the ice cream and because the drum did not get cold enough to freeze the ice cream.

Churning Issues
I believe that people complaining that it is not powerful enough to churn the ice cream should revisit their recipe. I found that when I put too much heavy whipping cream into the mix, it thickens really quickly and machine seems to be straining. When I used the proper mix of heavy whipping cream and milk, I didn't have that problem and the ice cream came out nice and smooth. Also, every ice cream maker creates a soft serve type consistency. If you want it to firm up, you need to dip it out of the drum and put it in the freezer for an hour or so. Also don't put bits of fruit or nuts into the churning mixture. Wait until after the ice cream is finished then fold that in my hand after you empty it into a bowl. The chunks will get caught between the paddle and drum and cause problems if you add them during the churn. Chunks are meant to be added later.

Drum Problems
You cannot submerge the drum in water. I clearly says so in the manual. If you can't read the small print, Google Cuisinart ICE-21 Manual and download the pdf for this unit. I did that and it was way easier to read. I put mine in the freezer in the upright position for 24 hours before using it the first time. After you churn ice cream you will a medium to thick layer of ice cream welded to the interior of the drum. DO NOT scrape it out with metal utensils. I just cover mine with a paper towel and after about 15-20 minutes I scrape the sides with a soft pliable spatula. Do not scratch the interior, it will cause problems later. Also do not put the drum back into the freezer until it thaws completely out. After waiting the 15-20 and scrapping the inside, I take my drum to the sink and spray it out with warm water, being careful not to submerge it or scratch it. I dry it out with a paper towel and sit it on my counter in the upright position to finish thawing out. Then I wipe off the excess condensation from the inside and outside and put it back in the freezer in the upright position.

So, after comparing products and reading reviews, I bought this one. Here's the drill: the bowl stays in the freezer, the stand alone freezer. Thursday we make our mix, so far from Peggy Fallon's The Best Ice Cream Maker Cookbook Ever. It gets stashed in the fridge overnight. Friday morning, the bowl comes out of the deep freeze, the mixture goes into the ice cream maker. When it's done in the ice cream maker it goes into the freezer. Friday night dessert? Home made ice cream. This machine is great. Just the right size for the 2 of us, works well, does the job. No messing around with ice and salt. Depending on the recipe it makes the same amount as 1 regular box of ice cream from the store. Did I get the warranty for 2 years, sure I did. Have I learned a lot about ice cream, you bet. Tips: if you've sprung for this ice cream maker, spring for fresh ingredients. Made a rocky road with walnuts from the back of the cupboard, we could tell. Be patient. If your want ice cream right now: go buy some. This machine is about enjoying the creation, not instant gratification. Does the ice cream bury store bought? No question. Has the machine performed as advertised? Sure has. Definitely has been a joy.

To be honest one of my best purchases here. Love it and going to buy 2 more as gifts for my sister and friend!
First I consider my self and wifey are ice-cream lover and addict sometimes!
We did some flavors until now and we will try more

Some comments before you buy it:
Noisy? yes, but not to level that bothers me.
Small for big family? maybe! for two of us we make one bowl every week (depend on feel and desire). you can buy second bowl ( I have it but never use it)
Easy to use? yes, using it easy. The tricky part is what you put in it! ( more explain will come)

Useful tips we did and worked for us:
1- If you love ice-cream heavy, hard, and texture smooth (like I do), You need to use heavy cream with your regular milk. If you are ok with light soft serve, milk with half and half will do the trick.
2- Do not over load the bowl with a lot of addetive ingredients. Its going to be difficult to freeze and unit as one texture. like adding a lot of chocolate ships or a lot of shredded coconut, that is no no.
3- 20 -25 min is proper time, Slightly less than is ok if you put less total ice-cream mix. I don't recommend going more than 30min! why? because the frozen bowl will not stay cold all time and your ice-cream will probably melt down after long time keeping it in machine.
4- Make sure your bowl is totally frozen before you start, shake it to make sure! I usually store it in freezer until I use it again, wash it an back again to freezer.
5- Avoid filling the bowl to the top, ice-cream grow bigger when set and will over flow and will make a miss and hard to clean.
6- *** I noticed that I can increase the hardness of my ice-cream by manually spreading the ice-cream mix to touch all inside surfaces of the bowl while still on by using rubber spatula. I do that in the last 2-3min before I turn off the machine. The ice-cream when start to freeze tend to stop moving or just touch one area inside the bowl and by spreading it you make it set faster.
7- I put in fridge for at least 2 hours before I use it! my wife like it soft and eat it immediately! 🙁
8- Did I say this? put your ice-cream mix in fridge or freezer for 30-60 min. before you start! the colder your mix the faster and easy to set and freeze inside the bowl
9- Price of ingredients to make a nice ice-cream? will I say fair to ok. As I mentioned, I use heavy-cream for hard serve ice-cream and I buy 1 quart around $6 (and I use it 2 times or two bowls, 2 cups each). you also add the price of regular milk and other flavors and ingredients as preferred.
I hope I didn't miss things. I waited sometimes to review this and try to be helpful! all above mentioned for the ice-cream and still enjoying my ice-cream making for now. I will move to frozen yogurt and I will add more tips to my review. Thanks

This ice cream maker works really well. I use it to make keto ice cream. The one drawback is that the freezer canister doesn't have a lid for storage so un eaten ice cream has to be scooped into another container for storage.

Could'nt be easier to make ice cream. Keep the metal container in the freezer even when not in use so it will be ready when you want to make ice cream. It doesn't really take up extra freezer space because I store other food inside of it when not in use. Only the removeable container is kept in the freezer, not the whole machine.

If you want softer ice cream, you can eat it right after churning even before you put the container in the freezer (assuming the container was stored in the freezer). From start to finish, the process takes not much time to make great ice cream. And since I am lactose intolerant and also need to watch my sugar, I use lactose free milk and use artificial sweetener.

My gut feeling is that it is well made. It doesn't seem like any of the parts are likely to break. But that is just my guess.

I followed the recipe for vanilla soft serve exactly as is and it came out GREAT! I left the bowl in the freezer for 2 days and the mixture in the fridge overnight, and let it mix in the machine for about 35 minutes before serving. It was VERY thick, just perfect.

I bought the Cuisinart ICE-45 Mix It In Soft Serve machine for the sole purpose of making my own Disney Dole Whips at home. After some research, I found that the Dole Pineapple Soft Serve mix is the exact stuff that Disney uses in the parks. The only problem is that the bag is intended to be mixed all at once and not in small portions. I used 2 1/3 cups of water and 1 1/3 cup of mix to make a quart of Dole Whip which just fits into this machine. Chill mix for 30 minutes before pouring into the soft serve machine. For optimal freezing, I keep the freezer bowl in my deep freeze and leave it there until I'm ready to make some ice cream. Regular freezer/refrigerators don't get as cold as the deep freezes. After 20-25 minutes in the Cuisinart - I have the perfect texture for soft serve ice cream. I made the mistake of turning it off once and the ice cream got so hard that the machine would not restart. I also have tried the Frostline Chocolate and Vanilla soft serve and was very impressed with those mixes (1 cup mix, 1 3/4 cup water). I should try my own home recipe one of these days but the mixes are cheap and very easy. I don't care to use the "mix it in" feature of this machine. It works, but its easier to just sprinkle toppings by hand and some toppings get too hard to eat.

This is a very good ice cream machine for its class (home use, freezer bowl). I'd owned the 1 1/2 quart Cusinart model and liked it a lot. Then someone in my house put the drum in the dishwasher and I found out when I tried to make a batch of ice cream that wouldn't freeze. Using the 1 1/2 quart model I was always scaling down recipes or hovering over the ice cream as it churned with a spoon, stealing spoonfuls ice cream as it threatened to overflow the ice cream maker because I overfilled it (not that I really minded that). I like the 2 quart size for those reasons,

If you've never owned one of these types of ice cream makers before, here's an overview. There are two main parts as far as what makes the ice cream. There is a paddle and a drum, aka the freezer bowl. The night before you intend to make ice cream (or earlier) park your clean freezer bowl in the coldest part of your freezer overnight. This is essential that the bowl be frozen through with no sloshing sound. This drum is what chills the ice cream.

When you're ready to make the ice cream, put the frozen freezer bowl into the base of the ice cream machine, put the paddle in and put the top on, start the machine and then pour your cold (repeat COLD) ice cream mixture into the freezer bowl as it runs. The cold of the freezer bowl chills the ice cream mixture, the paddle scraps the sides of the freezer bowl as it turns which scrapes off the freezing ice cream incorporating it back into the ice cream mixture and churns air into the mixture. Let the machine run for 20ish minutes. Give it a peak every once in a while because watched ice cream never freezes ;). When it's done, you'll hear the motor struggle a bit more because of the thickness of the ice cream, the ice cream will be soft serve consistency and will be done as far as its adventure with the machine. From here you could eat it as soft serve, or scoop out the ice cream into a freezer safe container and freeze it for a few hours. let the freezer bowl warm up a little, then wash by hand with warm soapy water and a soft sponge or cloth.

The negative comments that people have left seem mostly to be due to them not understanding how this machine works or that they expected something different, or both. Yes, you have to freeze the bowl overnight -- that's how this type of ice cream machine chills ice cream. It doesnt have its own refridgeration unit. If you want that, then pay 5x+ the price for a different type of machine. No, this machine doesn't produce solid hard ice cream -- it produces soft serve consistency because it churns and you can't churn rock solid ice cream. And You MUST WASH THE FREEZER BOWL BY HAND. This isn't a "to keep it looking it's best" issue like you sneak your pots and pans in the dishwasher even though you shouldn't -- the heat from the dishwasher will destroy the freezing liquid in the bowl and the bowl will never make ice cream again. You can tell that a well meaning relative put your bowl in the dishwasher because the bowl will still sound sloshy even though it's been freezing for days.

The It Never Froze My Ice Cream comments -- the person either put their freezer bowl in the dishwasher or the bowl wasn't cold enough. Or the freezer bowl was defective.
The It Won't Make Ice Cream Immediately, It Makes Soft Serve...comments -- that's true, but that's how this machine works.

Some have commented that they have to let the finished ice cream (after being I the freezer) sit on the counter for 15 minutes until they can scoop it. My suggestions are: 1. Use more fat in your recipe, 2. Let it churn more air as the machine runs, 3. Know that most commercial ice creams have a ton of what they call "overhead" which is basically air in the ice cream. You may notice that the same volume of two different brands of ice cream weigh differently. Ultra premium brands like Haagen Daaz have little overhead compared to, say most grocery store brands. Lower quality ice creams also have thickeners and stabilizers that hold the ice cream together but keep it from really forming solid. Ever leave a bowl of ice cream on the counter overnight and the next day it's a little melted but mostly in the same shape? That's the stabilizers. All of this makes commercial ice cream soft and easy to scoop even though it's frozen. Take heart that better quality ice creams like the one you are making are naturally harder when frozen, and therefore may take a sturdy ice cream scoop and perhaps a little muscle to scoop. On properly made ice creams (enough fat, enough churning) I've never made a batch too hard to scoop straight from the freezer.

In short, this machine works beautifully and its make quality ice cream. I'm very happy with it.

This is my first ice cream maker. I had been looking into getting one for a while and was suckered into getting this one from all of the positive reviews. I'm happy to report that I was not disappointed. The machine is a little noisy, but that's the only drawback that I can really think of. The first ice cream we tried to make was a twist on Ben n Jerry's Cherry Garcia ice cream made from real cherries and dark chocolate chips. The ice cream froze well and was absolutely delicious. Since then we've also made blueberry cheesecake with a graham cracker twist running through it and a chocolate brownie that didn't last two nights! We usually store the ice cream in a glass loaf pan for easy scooping or in recycled Talenti containers for easy portion control. Either way, it makes fantastic ice cream that you can make as healthy (or unhealthy!) as you want, and overall it's much cheaper than constantly buying pints of ice cream in the store. Definitely worth the price and I would definitely recommend it.

Just finished making (and eating!) two batches of ice cream. Excellent flavor and consistency! I bought an extra freezer/container and, after the first batch was done (25 minutes), placed the next freezer bowl in the mixer and added the second ingredients. One gallon of delicious ice cream in approximately one hour! Loved not having to buy ice, rock salt, etc. Your ice cream will be slightly creamy (not rock hard), but quickly can be "cured" and made harder by placing in your freezer for a while. I also loved how much more quiet this machine is compared with our regular ice cream maker. As far as durability, it seems well made, but time will tell how it holds up. When we finished transferring the ice cream to plastic containers, we immediately cleaned the freeze bowls (soap and warm water), dried them, and placed them back in the freezer ready to make another batch. Love this machine.

I have tried just about every brand Amazon offers in the last ten years.
THIS is by far the best. Nostalgia has wooden sides but the inside is lined
with heavy plastic (Elite and Aroma do not have this). Interior lining makes the
unit last longer, makes it much easier to clean after every use, and holds the
ice/salt mixture closer to the ice creams to make faster. And it does not leak
after the first few uses !!!
The best feature is the motor - The Hamilton Beach 4-quart was the loudest and
weakest motor by far - lasted for about three ice cream makings - stopping long
before the ice cream was made and the motor won't restart??? - Elite and Aroma
work well for awhile and then start to jam up a lot. You have to watch them constantly.
Also, if you get the slightest amount of water in them, they are done. Can't be fixed
and Elite does not sell just the motor replacement.
I have not had any trouble whatsoever with the Nostalgia motor on this 4-quart unit.
It is awesome. I just prepare it, turn it on, and go about my business while it makes.

PROS: Sturdy, Strong motor. Fastens tighter than other brands.
Makes great ice cream. Easier to clean than the competition.
Looks great.
CONS: I don't review items until I have used them for awhile. This ice cream

I bought this because the Cuisinart with the freezer bowl was out of stock. I am SO glad I did! [The freezer bowl has to chill overnight & I'd need to buy an extra bowl if I'm doing more than one batch of ice cream, and I've heard stories of the bowl leaking/coming apart.]
The Nostalgia ice cream churn is stupid easy to use & clean. I use about 3/4 of a 10-lb bag of ice and about 3/4 cup (estimate) of rock salt.
I learned things:
1) Fill the cannister with your ice cream, put in the paddle, put on the lid, and the little brown cap. Then place it in the bucket, carefully centered.
2) Pour in some ice, sprinkle some salt, repeat. Do not fill above the little hole on the side of the bucket. make sure the cannister stays centered. The little brown cap prevents ice and salt from getting into your ice cream. Do this quickly so the cannister doesn't freeze in place. Take the little brown cap off.
3) Align the motor and plug it in. There is no on/off switch. I plugged mine into a power strip with a switch on it.
4) The motor turns the cannister, not the paddle. I don't know why, it's magic. If the cannister is frozen & the motor won't turn it, try turning the motor on &off a few times. The churning process takes about 30 minutes.
5) Remove the cannister, pull out the paddle & scrape off ice cream or give it to someone to lick. After removing most of the ice cream from the cannister, I found a wooden spoon very useful in getting the frozen bits off the sides and bottom. It will be a 'soft serve' consistency, good for mixing in fruit/candy/whatever.
I love this ice cream churn & can make multiple batches at a time without issue. Highly recommend! but it would have been nice if the instructions were a bit more concise. Live & learn.

I was skeptical of this product after reading dome of the reviews but I went for it anyway. I wanted a tall skinny can. This freezer does not have that but it is not an older model short dumpy is a I feared. I made made my mother’s recipe. 2.5 c sugar, 2 t vanilla, 2 eggs, a good dash of salt, whole milk. I washed all parts and put can and paddles and lid in the big freezer then mixed up the recipe and chilled it. When our guests arrived I assembled everything and followed the instructions about ice and salt and let her whirl. I used a handle end of a wooden spoon to stick in the ice about every 10 minutes or so. I added ice snd salt as melting occurred. The motor was not laboring at 30 minutes so I let it run 10 more minutes. Then I removed the paddles and capped the top. Oh be sure to wipe the top off as instructions say. I cover the freezer with newspaper and let it sit about 15 minutes. Oh boy! It was firmer than soft serve and delicious! After feeding our guests I put the remainder in a freezer container. The deeper I scooped the harder the ice cream was. The very bottom required a spatula to break it loose from the bottom! Very please with this purchase so far. Exceeded my expectations. Oh on my recipe, if you want strawberries or peaches add 1.2 cup of sugar snd blend the fruit i like yo leave some bigger chucks. Next time fresh Peach!

Admittedly I had been looking at $300 ice cream machines. I noticed most of them made one quart at a time. I also didn't want to be divorced for buying one more expensive kitchen gadget shortly after buying a very expensive mixer and then a food processor. So I noticed this one says it makes a gallon and would save me $270. Two days later it arrived and we made our first gallon of ice cream. Took about 40 minutes from pouring ingredients to dishing it up. Fed a huge family with friends and some extra for the freezer. We made four gallons the first week! Oh, and I should mention we eat ketogenic (no sugar or grains) and made some excellent sugar free low carb ice cream that tastes better than even the sugary chemical filled junk from the store. Even better, none of our guests had a clue that they were eating healthy ice cream.

This little machine is a win! I never would have imagined it would be this great for the low cost we paid.

A lot of people claimed their canister had a dent, but I think that is just the design. Mine had the same indention and it looks factory made and purposeful. I made snickerdoodle ice cream last night. IT was perfect. I did not have to freeze it after, it was already formed well and solid in the maker. I made my batch and stuck in the fridge for 2 hours, then put it in the ice cream maker. Filled the bucket with ice and mortons rock salt. Took about 8 pounds of ice and 3 pounds of rock salt to make 2 quarts of icecream. It was perfect. It took 40 mins to go from a liquid to ice cream and was ready to eat right away. Entire process was easy. We put it in the kitchen sink for ease of draining. It was not overly loud, but you need to hear it so you can tell when it stops. Def worth it!!!

Great price, and it worked perfectly fine. The very easy vanilla recipe in the instruction manual was simple and good. They're not kidding about the amount of ice you will need, so it is good to plan ahead with your ice maker.

Earlier this summer I used the ICE-30 at my parents' home. After making about 7 batches of ice cream, I knew I wanted a maker at my own home. Having spent time using the ICE-30, I had a better idea what features I was looking for and ended up with the ICE-70 after considering the ICE-30, ICE-60, and ICE-70. Here are the reasons that led to that decision:

Noise: Both the ICE-30 and ICE-70 are loud, but the ICE-70 is less loud. Noticeable, but not substantial. I still don't want to be in the same room while churning, but the ICE-30 was loud enough that I didn't even want to be in an adjacent room.

Speed: The ICE-70 is noticeably faster. I've read other reviews that the ICE-70 turns at about 45 or 55 rpm (adjustable on 2 settings) vs. the ICE-30 turns at about 22 RPM. The faster speed supposedly aerates the ice cream better for a better consistency. I think the ice cream I get from my ICE-70 is slightly airier, and from the ICE-30 slightly more dense, but not a difference worth discounting the ICE-30 over. I also tend to find the faster speed makes the ice cream set up quicker. It will take a few batches to become familiar with what is right, but once you see it, it's pretty clear. (Additional note: I had more "soft" batches from the ICE-30, but those were early on, and I don't know if that was because it turns slower, or just because we weren't yet familiar with when the batch was ready yet - in both cases, you still need to transfer the ice cream to a container and store in the freezer to get it to firm up completely).

Mixing Paddle: Cuisinart updated the mixing paddle for the ICE-60 and ICE-70. It seems to mix the ice cream slightly differently and is slightly easier to get the ice cream out and to clean. Not a substantial difference. I believe the ICE-70 paddle is available for about $10, and it looks like it would also fit the ICE-30 mixer - but don't quote me on that. I hope to test this at some point.

Lid/Spout/Cover: First I'll note that the ICE-30 has a larger fill spout for pouring in your cream and ingredients, but it is also open. The ICE-70 has a slightly smaller fill spout but comes with a cover. We used a plate to cover the spout while mixing in the ICE-30 to keep dust/bugs out because we were using it in the basement (due to the noise!) so I do appreciate the built in spout cover in the ICE-70. Some users have complained the Lid doesn't stay on the ICE-70. Admittedly, the design is probably better and more secure on the ICE-30. With the ICE-70's smaller ingredients spout in the lid, it's tempting to pour the ingredients into the freezer bowl before starting the mixer. This doesn't work well because the cream freezes to the bottom of the bowl and then the mixing paddle doesn't seat properly in the bottom and the lid doesn't sit right and the lid won't lock in and stay secured. I've found that if I start the mixer with an empty bowl and pour in the ingredients through the spout on the ICE-70, the lid stays locked firmly in place.

Other differences: Honestly, I chose the ICE-70 over the ICE-60 only because the ICE-70 was stainless steel colored, as are all of my other small appliances. The ICE-70 has an automatic timer, but it really isn't necessary as you need to watch the consistency and check on it every few minutes anyway. You also don't want to forget about it (though I don't know how you could with the noise) and come back to melted ice cream. The ICE-30 has a simple on/off switch. The ICE-60 has what appear to be the same speed settings as the ICE-70, but no automatic timer.

All three mixers use the same freezer bowl, though the one marketed for the ICE-70 costs twice as much as the one for the ICE-30. The exterior color might be different.

Overall: I think the differences between the ICE-30, ICE-60 and ICE-70 are minimal, but are substantial enough to differentiate them. To me, I think the ICE-70 was worth the price difference for the upgrade, but if the cost is a factor that would discourage you from jumping in to buy one, then I wouldn't discourage anyone from buying the ICE-30 for a more budget friendly option.

I can not say enough about this wonderful machine. My guys have been spoiled forever and store bought ice cream (which is really ice milk) will never be the same. Now all my family wants me to make ice cream and bring to the Holiday celebrations. The machine is easy to use, easy to clean and is well built.

We really love the ICE-70, having used it about six times now. Very easy to clean, and very easy to use, and makes just right amount. Nothing really negative to say about this machine at all. Each time we made gelato it has been a big hit with anyone who comes over to visit and its good for parties or just socializing. 🙂

Also, it really doesn't take that long to make from scratch once you get the techniques down, and the best thing is that you know what you are eating since you buy the ingredients.

Only things I would pass on to future owners are:

1. Be sure to use a wooden spoon when getting ice cream/gelato/sorbet/frozen yogurt out of the freezer bowl, as metal spoon will scratch the finish (be nice if the instructions said this).

2. Consider buying a second freezer bowl if you want to make more than one batch at a time. It is worth it to avoid having to deal with trying to re-freeze the bowl, and wondering if you froze it long enough, etc. Also, if you are going to go through the trouble of making the ingredients, then you might as well make two batches (either of the same flavor, or two different flavors).

(And if you like gelato, consider getting Ciao Bella's gelato recipe book! -- although the machine comes with some nice recipes too)

At last! I can finally get allergy friendly, healthy ice cream without sugar or fillers that won't cause blood sugar spikes or inflammation. I made a coconut milk vanilla bean ice cream that tasted amazing (Thanks to Brianna Thomas' blog), and for Father's Day we had Zevia root beer floats! They were so good and my parents couldn't believe how good they tasted and that they were not harmful to their blood sugar and health. The machine was super easy to use. You just need to put the bowl in the freezer the night before and then load your ingredients the next day and mix your base and the put it in the machine to stir. You can add vegetable glycerine to make it stay a little softer, or just take it out about 20 minutes before serving to thaw to scoopable consistency. I also recommend getting those silicone skinny 1 or 2 quart containers for your frig so you can make a couple different flavors at a time. My hubby loves the chocolate mint best. It is nice to not have to pay the huge name brand prices for this machine. It just worked.
