I've long wanted a Chinese cleaver, ever since watching Martin Yan on the famous "Yan Can Cook!" TV show that appeared all across American public television when I was a kid. His knife skills are insane! And he almost always used a cleaver. In the back of my mind, I always knew that there would be a day when I would own a cleaver too.

I'm a knife nerd, and own almost fifty different kitchen knives off all types and kinds, made in various countries: Spain, Portugal, USA, Germany, Japan, France, Switzerland and even one made in Brazil. But one knife making country was missing from my collection: CHINA. So when I decided it was time to buy a genuine Chinese cleaver, I wanted one made in China.

Since there are tons of Chinese made knifes on Amazon, that seemed like the place to start my search. But I did NOT want a Chinese knife from an American based importer, so Mercer, Dalstrong, Zelite, Kessaku and Nexus were disqualified immediately, along with all similar types of brands. Not that any of the for-mentioned brands make bad knives, it's just that I wanted a Chinese cleaver, made by a Chinese company, that were proudly selling Chinese made knives. So pulling up all the listings for "chinese cleaver" on Amazon.com, I finally found a company that met my criteria: SHI BA ZI ZOU, a Chinese company happily selling their Chinese made knifes to American customers via Amazon.com

I have a knife block with a 3.5" (89mm) slot for a cleaver, so that was my limiting factor in choosing a blade--no wider than that. Looking at the various offerings from SHI BA ZI ZOU, I found two cleavers right away that really appealed to me: the 9" F208-1, and the 8" F208-2, but only the 8" would fit in my knife block, so that's what I ended up buying.

I've never anxiously awaited the arrival of a knife so much as this one, and it didn't disappoint. It's a very traditional cleaver, with a "beehive" wooden handle, full tang, and a very plain, BIG, rectangular blade of made of heavy gauge Chinese stainless steel. It's a cinch to use with the traditional pinch grip, and is quite the workhorse. The knife came in a very nice brown cardboard box, very suitable for gift giving, and actually much nicer than any box that my $$$ Japanese or German knives have come in. All the lettering and packaging is in Chinese characters.

Right out of the box, the blade was SUPER SHARP. The craftsmanship was also extremely nice for the pricepoint. SHI BA ZI ZOU uses a san mai type blade construction, with hard 80Cr13 high-carbon steel on in the middle, sandwiched by softer 10Cr17 steel. You can actually see a Yaxell Mon-like "wavy line" where the two steels come together near the blade edge. The SHI BA ZI ZOU Chinese characters are deeply etched into the blade, and there is also a very nicely done bit of laser marking with the company's web site emblazoned right on the blade. The handle is rosewood, and the strange beehive shape is extremely comfortable to hold, and surprisingly non-slip.

As soon as I started using this beast, I was in love! The knife is HEAVY, weighing in at heft 335g, which is a lot more than my favorite Japanese knife, a Shun Classic 7" Santoku that is a mere 205g. But I really like the extra heft, and it makes prep work almost too easy. The spine is just 2mm thick, but the blade is super stiff and hard, no flex at all. It can handle, with ease, any fruit or vegetable you can throw at it, as well as any protein. But it's not a meat cleaver, and it is NOT to be used to hack through thick bones, though it can go through chicken bones with great ease.

But the most amazing thing about using a Chinese cleaver rather than a typical chef's knife or guyoto, is that they are surprisingly safe. The giant blade is hard to miss, and there's plenty of room to press your knuckles against the blade in the typical claw grip fashion. Lots of blade to pinch as well, and it's shocking what kind of control you can get with this thing. If you're skilled enough, no need for a mandolin anymore.

The blade has an 12°-15° degree double bevel, with a very nice taper--looks like something Global would make! It just cuts with the greatest of ease and is an absolute joy to use. Though this knife will prep food for any cuisine, I find myself making more Asian dishes to find excuses to use the knife more often. This knife is a true workhorse, it's not the type of knife you are going to post photos of on Instagram, you just take it out of the box, and start putting it to work immediately. So far I've been maintaining it with just a F. Dick sharpening steel and a leather strop; haven't needed to put it on a stone yet. Might be a while...

Since getting this knife, all my other knifes just sit in their block, ignored and unused. Other than my favorite pairing knife, my boning knife, my slicer and bread knife, I could probably give all my other far more expensive knives away and never miss them. Yep, this chopper is that good. I'm seriously considering buying a second one.

Got this knife on a whim because I always wondered why Chinese cooks loved their chefs knives. Watched a few videos before hand to get an idea. After the knife showed up & I was able to use it I was pretty blow away. It has the sharpness of a chefs knife with the heft/weight of a cleaver. Its balanced in way that it easily does veg as well as meats up until you get to thicker bones(beef & pork). It'll handle chicken no problem. For those heftier bones I'd recommend using a normal crushing cleaver rather than this. Regardless this knife has definitely punched up into my knife line up displacing some other regularly used 8 & 10 inch chef knives.

My one complaint is that I've seen a tiny bit of rust from some standing water that made it into the edged text in the metal. Feel like it happened rather fast, but perhaps I should have dried the knife better.

Overall great knife. Comes rather sharp too. Be careful!


This F208-2 is my third Shi Ba Zi Zou knife and my favorite. The next is the F214-2 which is a curved cleaver and the first was picked up @ Chinatown Market SLC which introduced me to Shibazi.
The knives are well balanced and robust. A Chinese vegetable cleaver is extremely versatile. It can slice, scrape, tenderize and chop. The construction is very robust. For such a large blade it can cut precisely with great precision. Food can easily be scooped up on the blade and transported to where you wish. Just watch Martin Yan use one of these and you will be amazed. A 20 degree sharpening angle will give you longest life of sharp edge. I am learning how to put a culinary sharpness on the knife to keep both of us smiling.

If you're looking for a big heavy knife of this shape, then you should buy this. It's good for cutting pizza, quesadillas, meat, meat with bone, meat again - without bone again, meat, garbage, and pizza. It cuts the living daylights out of vegetables but I like using a straight cleaver better if I'm dicing or want thin slices. For everything else, this knife slaps.
You don't need a meteorite knife or a $200 or more bespoke hand forged weapon. For 99% of people, it won't be appreciably better for you than this.
If you're a chef, you already know which knife you want. Stop reading this.
So if you're of delicate constitution, you may want a less robust knife for an extended chop sesh.

Get a knife sharpener because you need one anyway, but get a nice one and sharpen this bad boy once a year or something.


I've used this 7-inch Chinese Chef's knife for a couple of months or so. It was received sharp out of the box. This knife is quite visually impressive, well finished, attractive, and easy to handle. Packaging was more than acceptable too. The shape of the blade combined with the luster of the Pakkawood handle is stunning and immediately captured my attention. Its looks begged me to search for finishing flaws. I couldn't find any. The fit and finishing of my 7-inch Vegetable Cleaver is impeccable. The balance point seems to be located perfectly at the location of my pinch grip just forward of the bolster, which is remarkable for a cleaver-type blade. The push cut performance of this knife on vegetables is really great. You would expect this knife to excel at chopping...and it truly does. It's edge and it's heft make quick work of carrots and potatoes while it's still nimble and sharp enough to slice delicate herbs such as Italian Parsley. I like using this TUO Vegetable Cleaver knife so much, it has quickly become my go-to knife and it remains within immediate reach of the cutting board. Honing on the Chef'sChoice Pronto Pro Diamond Hone 4643 keeps this knife in wonderful shape. This knife is an excellent value and I think most home cooks like me will be very pleased with this TUO Chinese vegetable cleaver. UPDATE, 9/27/17: I am so impressed with this particular knife, I purchased my second 7-inch Vegetable Cleaver during a Lightning Deal. I felt I wanted a spare on hand in case this production knife was discontinued in the far-off future. If TUO Cutlery were to produce this particular blade shape in VG-10 steel with a Damascus finish, I would purchase it in a heartbeat. This knife is just stellar as is! But a VG-10 steel blade with a Damascus finish will make this knife even more appealing than the current Five-star rating this knife has already earned to date.


I bought this along with some other items to explore Asian/indian cooking. love it, the weight is good, very sharp and the pakawood is smooth warm and primitive. not sure how the edge will hold up, but I enjoy sharpening and this is available in a 62+ hardness (for additional money). if your thinking about getting an ungodly expensive competitor? unless you are a pro, reconsider; for under $200 total I was able to get the knives, board, scale, wok,sushi kit, and thermometer. Mercer's biggest competitor is Victorinox. Probably both about the same quality.

Victorinox does not make a 14" slicer, they make only an 11". The extra few inches helps for brisket.

The rosewood handle looks nice. Reminds me of steak knives at Outback. Victorinox makes a rosewood handle version too.

Messermeister makes a good 14" sheath that fits this. Or make your own out of leather or Kydex (looks cool if this is your BBQ slicer)

Mercer has several products lines.

Millennia -
is the lowest end line, which is the best bang for buck and what the culinary schools recommend for newbies. If you heard someone recommend Mercer, they are probably referring to this product line. These have a good quality plasticy handle.

Praxis -
this is the Milennia but with good looking rosewood handle.

Genesis, and other product lines -
these are nicer blades and better looking, but other brands make them better. Maybe still a good value? but not what Mercer is known for. This is like buying a fully loaded Hyundai sonata.

Cheap Chrissy

I needed a replacement knife for the most well used knife in my butcher block. So I bought a few different knife block sets and a couple of individual knives including this one. I returned all but this one. All the other ones were dull but this one is amazingly sharp. It is far better quality than the others as well as the one that came with my butcher block. It's amazing I haven't chopped off my fingers, it's that sharp. The handle could probably use some extra oil or stain to protect it and to match my block knives. It's not amazingly ergonomic but it is slightly larger - both the handle and the blade - than any of the other chef knives I tried out. At first it stuck out slightly from my block because it is bigger, but it is so sharp it has cut its way into the wood after about a month of regular use. I recommend this knife if you want a sharp, heavy duty knife that does the trick.


The knife is great. Good weight, everything is pretty comfortable. The square edges of the knife where you'd normally pinch grip are sharp, but nothing some sand paper can't fix. Handle IS comfortable, but if it gets wet, the round shape lets your hands slip easier unlike western style knife handles or hexagonal Japanese style knife handles. If you don't mind this style of knife, it's a good everyday use for MOST things. It is not good for precision work that a regular western chef knife or paring knife would be good for.

The best workhorse knife out there! I have bought many for myself and as gifts. Sharpens to a razor on a good whetstone set. There's an adjustment period if you're not used to a vegetable cleaver, but it's well worth it. You'll get a lot done with this knife and after using it regularly for a while your standard French chef knife will feel light, agile, and well controlled in your newly strengthened hand.

This is the cleaver in countless Chinese households and professional kitchens. You cannot beat the value of the knife. The factory edge is not good but it takes a decent edge if you take the time to sharpen it. The things I didn't like about it is that it is heavy, much heavier than the western chefs knifes that I'm used to. The round handle caused hand cramps for me. Overall it is a great introduction to Chinese Cleavers. Maybe you like it and you stick with it. If you don't like it you know what you don't like and can look for Chinese Cleavers with slightly different styles.


Bought on a lark while on sale, thought it was a cheap experiment. Found out that it was actually a quality kitchen tool.

This knife has become indispensible for all my Asian cuisine cooking, it is just as versatile as everyone claims. Came in a plastic bag, inside a thin cardboard sleeve where it still rests. Had a great edge out of the... sleeve(?) and can take and hold a wicked sharpness throughout a cook. I hone it every time I use it, just a couple quick swipes brings it right back to an edge that rivals my chef's knives at 5x the price.

The one thing I was not expecting, was the weight of this knife. It's 13 oz. or 369g by the kitchen scale, which is about twice as heavy as any of my other knives. Having that much weight though is actually a good thing, as it's the weight of the knife that does the cutting and it makes doing prep work with this knife almost effortless. Chinese chef's knives use a down-and-away motion, and this knife will go through almost everything in a single stroke, meaning less tearing of the meat (which means more tender, juicy meat). The weight also means you have tons of control, as you really have to mean to move the knife to do it. That makes doing fine work like mincing garlic really easy.

It's listed as a "cleaver", but it's really not that at all (and shouldn't be used as one!). This is the quintessential tool of any Chinese kitchen, the one knife to rule them all. Always hand-washed and dried, no signs of rust at all.

I found out about this knife from an elder Chinese chef on YouTube who recommended this exact cleaver. He had been using and re-sharoening his same knife for decades. So I gave it a whirl.


For me, a woman of hands with long skinny fingers, this knife is well-balanced, not too heavy, but heavy enough to do most of the work when chopping and slicing. This cleaver is a JOY to work with when slicing vegetables very finely. Our household has a large set of Cutco knives, but I niw find myself reaching for this cleaver to do pretty much all my chopping, mincing (don't get me started how amazing this thing is for mincing), and fine slicing. Because of the larger, heavier, VERY SHARP blade, I find that slicing fruits and vegetables very thinly (even roots like carrots, radishes and potatoes) is a JOY. I prefer this knife now over the $140 Cutco chef knife for the same intended functions.

It's also easy to sharpen!

Slight drawback - if you have very large hans, the lovely wooden handle might be a bit small, but I think it's a decent size for most hands.

I rarely leave reviews, but I gotta say I'm more than happy with this knife. It's the first cleaver-ish knife I've worked with and it makes dicing 20 lbs pounds of onions at a time as fun as dicing 20 lbs of onions at a time can be. It's weighty enough to follow through with your chop with minimal effort and the broad blade can conveniently double as a bench scraper to scoop whatever you're working on into a pan or storage container. It took me a few tries to get used to the weight, as I've mainly used western style chef knives in the past, but since then I've easily hacked through dense veggies like carrots and sweet potatoes, and have even used it for smaller jobs like mincing garlic (that broad blade comes in handy crushing when crushing clove after clove). Haven't had to sharpen the blade yet and I've been leaning on it as my main knife for at least a month now.

So yeah, fun and more versatile than you'd think.


I bought this knife about 6 months ago, and it's been my go to since then. It has developed a really nice patina. It takes an edge easily and holds it well. You do have to be sure that you dry it thoroughly after washing. You also have to wash it immediately after cutting anything acidic. This is just a fact of a carbon steel blade though. Overall, this has been a really fun knife to own, and I've recommended it to a couple of others already.

Over the past 55 years of making Chinese food, I've always owned whatever sort of cleaver I could find on the shelf of a shop in Chinatown. This Shibazizuo knife is in the same class as high-end chef's knives from the best and most expensive European manufacturers. It's wonderfully thin and allows slicing finer than I've ever achieved without using a mandoline. I think I'll take the trouble to learn how to apply the final honing which will preserve its factory edge. One of the best knives I have ever owned, but far from the most expensive.


I needed a Chinese cleaver that is smaller sized due to , I have small hands. (this applies to most Chinese women). I love this knife. I also noticed that my old aunty who lives with me, is also using my knife. Please note that this has a slightly curved edge, which may be difficult to get used to, if you previously used straight-edged knives (like I did). Overall this knife is a great value and just right for smaller hands.

This thing is wicked sharp and I stone sharpen all my knives so I know sharp. It has a flat ground edge but would also work great with a convex from a blet sharpeners like a Ken Onion. It has good weight and surprisingly well made. The blade profile is thin which is what you want for chopping vegetables. If the blade is thick it won't cut things like onions well. Its handsome and no cheap looking. I'm impressed.

The blade is working nicely and this coming from a former Chinese Restaurant cook.
Hold the edge well and that tip in really sharp.

If I were to have any complaint at all it's that the small tip guard they ship it with falls off easily.
With the others that live with me it would be nice to have one that would stay on better.

I bought this knife to replace a missing paring knife in my old set. I was pleasantly surprised to find that it had a good heft and the construction feels solid. There was no wobble in the blade when cutting denser items like cheese and apples. The handle round fits comfortably in my hand, and I really like the look of the wood grain. If I need to replace any of the other knives in my old Chicago Cutlery set, I would seriously consider getting more TUO knives.

I have been cooking Chinese food since the late 70's, but always used western style knives and cleavers. Since the pandemic, I have been cooking a lot more Chinese food. I have also expanded my repertoire to include Hunan and Sichuan cooking. It was time to break down and get a good vegetable cleave. I was aware of Victorinox's reputation for quality cooking knives at the start, but this was the first one I tried. I did a lot of research, and considered buying one of the cheaper cleavers, that I'm sure are also good, but I wanted to evolve my techniques with something that would stay with me. I'm glad I did. This cleaver is exactly what I wanted. it has a very comfortable handle, a sharp well constructed blade, and most important, the blade it relatively flat. I did not want a cleaver that I had to rock like a western knife, I wanted to chop, and chop it does very well. This is not a heavy weight claver, I would not chop bone with it. Even chicken leg and thigh bone might be a little too much for it. I won't find out because I have a heavy, non stainless Sabatier cleaver that can do this, no-problem. This cleaver makes everything expected in Chinese cooking much easier. It also conveniently doubles as a bench scraper for whatever you slice, chop or dice with it. It has also taken over dicing duties in my western cooking. It has my highest recommendation!

This is a perfect, no-frills vegetable cleaver. Like all the Victorinox kitchen knives it is a stamped blade, but its edge is perfect for fine prep work. I personally prefer the taller Chinese style to the Japanese nakiri blade. The overall size of the blade is somewhat smaller than the conventional Chinese cleaver, but I prefer it in this size. Highly recommended.

Razor sharp. Holds an edge like no other. Just what I would expect from victorinox.
I've used this brand for years and they never let me down. I've always preferred this style of knife, but never bought a quality one due to none of my favorite companies making one.

I do wish it came with a sleeve, however. Luckily I found one quickly. And with the edge on this knife a sleeve is necessary.

For around 20$ USD you get an authentic hand forged knife straight from the billet!

Please be aware this is in fact hand crafted and not stamped from a single piece of sheet metal. It is made from Pounding superheated layered steel bars repeatedly until it forms a uniform cleaver shape. Each knife is unique and has a very appealing rustic appearance.

The knife comes fairly sharp, however I sharpened mine to my liking with a slightly steeper angle as I will be primarily use this as a vegetable knife. Because of the handmade nature there will be imperfections and may require some slight adjustment to fit your meticulousness. The handle too is a bit rustic in nature. May require some mineral oil and maybe a quick touch with fine sandpaper. I like mine textured for better grip, and oiled mine with mineral oil.

The blade comes from the factory covered in a plastic bag coated in machine oil. Once you wash off the oil, IMMEDIATELY DRY the knife! This is forged metal, and it is not stainless, so it will rust almost immediately when wet. Keep your knife lubricated with some cooking oil after use and you should be ok.

Overall I had a fun time tuning this knife to my needs and it makes a nice “ching” sound when you flick the side of the blade with your fingers.

This knife is NOT a display piece, a work of art, or a cheesy dishwasher safe garbage knife that requires no maintenance and doesn't do anything exceptionally well.

That said, this knife is forged carbon steel--not stainless steel. Effectively, this means that it holds an edge better and longer--and the edge is easier to maintain and restore. Translation: a few light strokes with a knife steel before use yields a surgical edge. After use, it MUST be washed, dried, and (vegetable) oiled (handle as well) before being stored.

Professionals regard this care as a small price to pay for a perfect non-stop and ugly handle, a surgical edge with nothing but the most ordinary sharpening tool, and a design optimized over generations to do the job right.

No knife has a forever edge. This knife does not require the exotic equipment and skill of knives with a super alloy core, something that would take far too long for a professional. This is far and away the best working chef's knife I have ever used.

I like to cook and my trusty stainless steel knife was getting long in the tooth. As much as I love using it, I wanted something different. I tried a couple different blade styles (anyone need a spare knife?) and this has now become my daily driver. If you know how to use it, sharpen, and maintain it then you'll really enjoy using this knife.

Mine came extremely sharp but it was real easy to take it from X-Acto to scalpel. And it maintains that edge with good care. Just watch your fingers!

The big flat sides also make it great for scraping/scooping things off the cutting board right into the pot.

I have not tried using it as a personal flotation device but I suspect the metal to wood ratio is not ideal for keeping a person above the waves.

All-in-all, for the price, this is one of the best investments I never really made. In less than 6 months, it's earned its worth many times over!
